This Italian-inspired innovation came from California's cannabis scene around 2015. Chefs realized that the natural oils in traditional pesto were perfect for THCa infusion, and the earthy notes of cannabis actually enhanced the basil's flavor profile. It's like they were meant to be together - a match made in culinary heaven!

Ingredients

For Decarboxylation:
  • 5-10 grams of THCa flower
  • Parchment paper
For Pesto:
  • 2 cups fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup pine nuts
  • 3 garlic cloves
  • 1/2 cup olive oil
  • 1 gram decarbed THCa flower
  • Salt and pepper to taste

 

Directions

Step 1: Decarboxylation
  1. Preheat oven to 245°F
  2. Grind THCa flower coarsely
  3. Spread evenly on parchment-lined baking sheet
  4. Bake for 30-40 minutes, stirring every 10 minutes
  5. Let cool completely
Step 2: Make your Pesto
  1. Toast pine nuts in a dry pan until fragrant
  2. Combine basil, Parmesan, pine nuts, and garlic in a food processor
  3. Pulse until coarsely chopped
  4. Add decarbed THCa flower
  5. Slowly drizzle in olive oil while processing
  6. Season with salt and pepper
  7. Store in an airtight container in the refrigerator
